Description:
Pasteles are a traditional holiday dish, often enjoyed during Christmas celebrations. They are similar to tamales, but instead of cornmeal dough, pasteles are made with a masa (dough) of grated root vegetables, typically green plantains, yautía (a type of root vegetable), and sometimes calabaza (pumpkin). The masa is seasoned with garlic, onions, annatto oil (achiote), and other spices for flavor.
The filling is usually made of seasoned pork, though chicken or beef can also be used. The meat is marinated with sofrito, a blend of garlic, onions, peppers, cilantro, and other herbs and spices, giving the filling a rich, savory taste.
